Crispy, golden-brown chicken tenders made healthy in the air fryer with Panko and whole wheat breadcrumbs.

2 pounds chicken tenders (about 14)
2 teaspoons kosher salt (divided)
2 large eggs
1/3 cup panko breadcrumbs
1/3 cup whole wheat breadcrumbs
2 teaspoons paprika
1 teaspoon garlic powder
1/4 teaspoon ground black pepper
Olive oil spray
Greek Yogurt Ranch Dip (for serving)
Barbecue Sauce (for serving)
Instructions
- Pat chicken tenders dry with paper towels and sprinkle with 1/2 teaspoon kosher salt.
- Beat eggs in one shallow bowl. In a second bowl, whisk together panko, breadcrumbs, paprika, garlic powder, pepper, and the remaining 1 1/2 teaspoons salt.
- Dip each chicken piece into the egg wash, then coat thoroughly in the breadcrumb mixture, pressing to adhere.
- Preheat air fryer to 400°F. Line a baking sheet with parchment for holding prepared chicken.
- Spray the air fryer basket with olive oil. Place tenders in a single layer without touching. Spray the tops with olive oil.
- Air fry for 7 to 8 minutes, flipping once halfway through, until internal temperature reaches 165°F.
- Keep finished batches warm in a 250°F oven while cooking the remaining chicken.
Notes
- Do not overcrowd the basket or the chicken will not crisp.
- Always use an instant-read thermometer to ensure chicken is safe to eat.
- For extra spice, add 1/4 teaspoon of cayenne pepper to the breading.
