Description

A creamy and protein-packed snack featuring fresh blueberries and rolled oats, perfect for a quick energy boost.

Ingredients

Scale

1 cup rolled oats
½ cup cream cheese, softened
1 cup plain Greek yogurt
½ cup vanilla protein powder
½ cup fresh blueberries
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 pinch salt

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, Greek yogurt, honey, and vanilla extract until smooth.
  2. Stir in the vanilla protein powder and salt until fully incorporated.
  3. Add the rolled oats to the mixture and stir until a thick dough forms.
  4. Gently fold in the fresh blueberries with a spatula to avoid crushing them.
  5. Using a small scoop or spoon, form the mixture into 12 even balls.
  6. Place the bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to set.
  7. Serve chilled and store leftovers in an airtight container in the fridge.

Notes

  • Use certified gluten-free oats if necessary.
  • If the mixture is too wet, add another tablespoon of oats.
  • Keep refrigerated for up to 5 days.
