Description
A rich, single-serving chocolate cake with a molten center, packed with 33g of protein and ready in under 2 minutes in the microwave.
Ingredients

⅓ cup full-fat cottage cheese
1 egg
2 tbsp chocolate protein powder*
2 tbsp black cacao powder*
2 tbsp maple syrup
½ tsp vanilla extract
¼ tsp salt
1 tbsp dark chocolate chips*
pinch of flaky sea salt (optional)
Instructions
- Lightly grease a ramekin and set aside.
- To a small blender add cottage cheese, egg, protein powder, cacao powder, maple syrup, vanilla, and salt.
- Blend until completely smooth and creamy.
- Pour the batter into the prepared ramekin.
- Top with the dark chocolate chips.
- Place ramekin on a small plate (to catch any overflow) and microwave on high for 90 seconds.
- Sprinkle with flaky salt (if using) and let cool for 2 minutes before serving.
Notes
- *Ensure protein powder and chocolate chips are suitable for your dietary needs.
- Microwave times may vary slightly. The cake is done when the edges are set but the center is still soft.
- For best results, use a 6-8 oz ramekin.
- Serve immediately for the best molten center.
