Description

A rich, single-serving chocolate cake with a molten center, packed with 33g of protein and ready in under 2 minutes in the microwave.


Ingredients

⅓ cup full-fat cottage cheese
1 egg
2 tbsp chocolate protein powder*
2 tbsp black cacao powder*
2 tbsp maple syrup
½ tsp vanilla extract
¼ tsp salt
1 tbsp dark chocolate chips*
pinch of flaky sea salt (optional)


Instructions

  1. Lightly grease a ramekin and set aside.
  2. To a small blender add cottage cheese, egg, protein powder, cacao powder, maple syrup, vanilla, and salt.
  3. Blend until completely smooth and creamy.
  4. Pour the batter into the prepared ramekin.
  5. Top with the dark chocolate chips.
  6. Place ramekin on a small plate (to catch any overflow) and microwave on high for 90 seconds.
  7. Sprinkle with flaky salt (if using) and let cool for 2 minutes before serving.

Notes

  • *Ensure protein powder and chocolate chips are suitable for your dietary needs.
  • Microwave times may vary slightly. The cake is done when the edges are set but the center is still soft.
  • For best results, use a 6-8 oz ramekin.
