Description

A safe-to-eat, no-bake protein cookie dough made with almond flour, vanilla protein powder, and peanut butter. A high-protein, healthy snack or dessert ready in 10 minutes.


Ingredients

1 cup almond flour
1/2 cup vanilla protein powder
1/4 cup unsalted creamy peanut butter
1/4 cup maple syrup
1/4 cup non-dairy milk (more as needed)
1 teaspoon vanilla
2/3 cup chocolate chips


Instructions

  1. Whisk together the almond flour and protein powder.
  2. Heat the peanut butter in the microwave for about 20 seconds to slightly melt it.
  3. Add the peanut butter, maple syrup, milk, and vanilla to the dry ingredients.
  4. Mix with a rubber spatula until combined, adding 1-2 more tablespoons of milk as needed.
  5. Fold in the chocolate chips.
  6. Leave as is or roll into balls. Store in the fridge for best results.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • For a nut-free version, use oat flour and sunflower seed butter.
  • Dough consistency can be adjusted by adding more milk or almond flour.
