Description

A moist, protein-packed banana bread made healthy with cottage cheese and almond flour. Perfect for a guilt-free snack or dessert.


Ingredients

2 ripe bananas, mashed
3 eggs
1/2 cup cottage cheese
3 tablespoons maple syrup (adjust to taste)
2 teaspoon vanilla extract
2 1/2 cups almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
Optional mix-in’s: walnuts, chocolate chips or blueberries


Instructions

  1. Preheat oven to 350 degrees F (175 C). Line a loaf pan with parchment paper and grease.
  2. In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup and vanilla extract until smooth.
  3. Mix in the almond flour, baking soda and cinnamon until fully combined. Chunky cottage cheese is okay.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for about 50 minutes. Tent with foil after 30 minutes if the top is browning too quickly.
  6. Remove from oven when a toothpick inserted into the center comes out clean. Cool completely before slicing.

Notes

  • Use very ripe bananas for the best sweetness and moisture.
  • The bread is done when a toothpick comes out clean or with a few moist crumbs.
  • Store in an airtight container at room temperature for 2 days or in the fridge for up to 5 days. Freezes well.
