Description
A moist, protein-packed banana bread made healthy with cottage cheese and almond flour. Perfect for a guilt-free snack or dessert.
Ingredients

2 ripe bananas, mashed
3 eggs
1/2 cup cottage cheese
3 tablespoons maple syrup (adjust to taste)
2 teaspoon vanilla extract
2 1/2 cups almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
Optional mix-in’s: walnuts, chocolate chips or blueberries
Instructions
- Preheat oven to 350 degrees F (175 C). Line a loaf pan with parchment paper and grease.
- In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup and vanilla extract until smooth.
- Mix in the almond flour, baking soda and cinnamon until fully combined. Chunky cottage cheese is okay.
- Pour the batter into the prepared loaf pan.
- Bake for about 50 minutes. Tent with foil after 30 minutes if the top is browning too quickly.
- Remove from oven when a toothpick inserted into the center comes out clean. Cool completely before slicing.
Notes
- Use very ripe bananas for the best sweetness and moisture.
- The bread is done when a toothpick comes out clean or with a few moist crumbs.
- Store in an airtight container at room temperature for 2 days or in the fridge for up to 5 days. Freezes well.
