Description

A high-protein, nutrient-dense bowl featuring seasoned lean ground beef, roasted sweet potatoes, and fluffy rice. Perfect for healthy meal prep and easy weeknight dinners.


Ingredients

1 tablespoon olive oil
1/2 large yellow onion, diced
1 pound lean ground beef (93/7)
1/4 cup chicken broth or water
1 ounce taco seasoning packet
2 tablespoons tomato paste
11/2 teaspoons minced garlic
6 cups diced sweet potatoes
2 tablespoons olive oil (for potatoes)
11/2 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Cooked white rice
Cilantro-lime sauce


Instructions

  1. Prepare your white rice or cilantro-lime rice according to package instructions.
  2. Preheat your oven to 425°F (220°C).
  3. Toss diced sweet potatoes with 2 tablespoons olive oil, paprika, garlic powder, salt, and pepper on a large sheet pan.
  4. Spread potatoes in a single layer and roast for 30 minutes, flipping every 10 minutes until tender.
  5. Heat 1 tablespoon olive oil in a large skillet over high heat; sauté onions for 3-5 minutes until golden.
  6. Add ground beef to the center of the skillet, brown and crumble until liquid is absorbed.
  7. Stir in chicken broth, taco seasoning, tomato paste, and minced garlic; cook for 2 minutes until fragrant.
  8. Divide rice into 4 bowls, top with roasted sweet potatoes and the beef mixture, and add desired toppings.

Notes

  • Note 1: Use a low-sodium taco seasoning to keep the sodium content low.
  • Note 2: Suggested toppings include avocado, pickled onions, jalapeños, or a dollop of Greek yogurt.
  • Swap rice for cauliflower rice to make this a low-carb meal.
